Vegetarian cacao coconut muffins
1 3/4 cup whole weat flour
3/4 cup coconut flakes
1/2 cup cocoa powder
2 teaspoons baking powder
1 egg (or substitute)
1/4 teaspoon salt
3/4 cup brown sugar (or maple syrup)
1/4 cup coconut oil
1 cup canned coconut milk
1/2 teaspoon vanilla
Pre-heat oven to 350 F.
In a large bowl, combine all purpose flour,
coconut flakes, baking powder, and salt.
In a small bowl, whisk together sugar, oil, egg, coconut milk, vanilla extract.
Pour wet ingredients into bowl with dry ingredients. Stir to combine dray and wet ingredients.
Put batter into each cup of a 12-cup muffin tin
(cups should be 3/4 full.)
Top each muffin with a little
bit of coconut flakes.
Bake for 15 minutes.
