I'M BECOMING A BROCCOLI


I haven't talked a whole lot about food on this blog although I do post recipes from time to time, I don't really talk about how or what I eat. Why would I want to talk about what I eat you ask? Because food is always on my mind sort of like art or cats. Nothing can get me more excited than food... If I plan something there is always food involved. So let's talk about it.

Last year I decided that I would stop eating meat. I did and still do. I am not a picky eater so it wasn't hard to find fun and tasty meals to eat. After about six months I started to realize that I had developped a bad habit. I was replacing meat with bread and cheese and lots of other carbs; tofu burger, pasta with lots of cheese, sandwiches, etc. I had bread and cheese with everything because it made me feel full sort of like meat does. Once I came to that conclusion I decided I wanted to eat more of a plant-based diet; less dairy, more veggies and I did and still do. It feels great.

What do I eat? A typical day sort of looks like this - Breakfast : toast with peanut butter + a fruit/veggie/seed smoothie | Lunch : kale salad with veggies (tomato, broccoli, green onion, cucumber, edemame, zucchini) and balsamic vinaigrette | Snack : soy seeds, dried fruit | Diner : rice with tofu and veggies (eggplant, green pepper, mushroom, cauliflower, broccoli, kale) | Dessert : homemade muffin or cookie. I would lie if I told you every day looks like this. I do eat pizza and fries sometimes. Whoever would choose to eat broccoli over pizza please come forward.

Do I eat enough protein? I think this is the question I've been asked the most in my entire life. I say yes everytime. Protein isn't only based in meat or eggs, you can find it everywhere, for example in: tofu (soy), green veggies, quinoa, beans, yeast, nuts, etc... I eat all of the above, daily.

Why am I doing this? I didn't wake up one morning and decided I wouldn't eat meat ever again. I made two attempts to go vegetarian. The first failed after 2 weeks. The second time I had a reason I truly believed in; live cruelty-free. Although I don't live a 100% cruelty-free life, it's a work in progress.

EAT : PURPLE AND GREEN PESTO PASTA (VEGAN + GLUTEN FREE)


I'm so excited about this recipe. It's tasty, easy, healthy, dairy free, gluten free and meatless. Can't get better than that.

PURPLE AND GREEN PESTO PASTA (VEGAN + GLUTEN FREE) //

2 cups uncooked rice pasta
1 cup red cabbage
3/4 cup edamame
1-2 cups spinach
1/2 cup nutritional yeast
*you can add mini portobello mushrooms for a bolder taste

Cilantro pesto :
1/2 cup of fresh cilantro
1/2 garlic clove
1/2 teaspoon salt
2 teaspoon olive oil
(Blend everything together in a food processor until smooth)

Bring a pot of water to a boil. Add pasta and cook until al dente.
In a non-stick frying pan add the red cabbage, edamame and cilantro pesto and fry until cabbage is tender. 
Add the nutritional yeast and pasta to the frying pan and mix everything up. 
Serve in a bowl and eat it with a spoon! (I hate forks.)

EAT : GET COZY CHOCOLATE CAKE

I also ate a piece of that cake last night - all snug up on the couch while watching The Office. 

GET COZY CHOCOLATE CAKE (VEGAN)//

1 3/4 cup whole wheat flour
1 cup strawberries (mashed)
1/2 cup cocoa powder
1 avocado (mashed)
1/4 teaspoon salt
1/4 agave nectar (or sweetener of choice)
1/4 cup coconut oil
1/2 cup almond milk
2 teaspoons baking powder
1/2 teaspoon vanilla
* I also sprinkled a couple of teaspoon of oat bran and flax seeds

Chocolat glaze
1/2 cup cacao
1/4 cup coconut oil
2 tablespoon agave
1-2 tablespoons water (or more for desired consistency)
Whisk everything together until smooth.

Pre-heat oven to 350 F.
In a large bowl, combine whole wheat flour, cocoa powder, baking powder, and salt.
In a small bowl, whisk together strawberries, oil, avocado, almond milk, vanilla and agave.
Pour wet ingredients into bowl with dry ingredients. Stir to combine.
Put batter into 9 x 9 dish. Bake for 25-30 minutes.
Let cool. Spread glaze all over it. Eat up!

I've been trying to be more conscious of what I feed my body. That explains why I've been obessed with food lately. I mean, I'm obsessed with making it. Yesterday I couldn't stop. I made homemade pizzas, almond and oatmeal cookies, vegetable soup, a loaf of raisin bread and an apple crumble. I haven't photographed any of it to put on the blog yet. In the meantine, I thought I'd share recipes that inspire my everyday meals.

2 Lunch / Swiss Chard and Chickpeas Salad 
3 Diner / Grilled Spring Vegetable Tacos with Cauliflower Tortillas 
4 Dessert / Blueberry Tarts for Two
